Not using H2 for Metabase application data (from JAR)

The docs (for Launching from the JAR) say “see below for details on changing the application data storage from H2 to a SQL server”, but there is nothing else on the page!!!

OK, I think I figured out that I need to set a bunch of environment variables before starting the JAR file.
