I setup Metabase on a Heroku instance and wanted to use the MacOS client with that though. Am I able to use the macOS client to point to a URL to login and use?

You only need a single instance of Metabase. If you want to use the Heroku instance, then just point your browser to that URL - most browsers allow creating a “chromeless” window, so it looks like a program, in Chrome it’s in the menu > More Tools > Create shortcut…
