In free plan installation, on postgres d, I don't able to set permission in order to exclude tables to specific users.

Are you referring to this blocked permission? Since that's only available with pro or enterprise
So, there is no way in order to hidden some tables to specific user.
You can set permissions to view/query tables in the Permissions area in Metabase Admin. It's in the Open Source edition.
Tony's talking about a more advanced option that prevents you seeing a question even if you have rights to the collection (something like that, any way).
No, I didnt find these way. Each user can see all DBs and all tables. I can block query builder.
