When I am trying to select field filter then the variable doesn't show up, else when selecting other fielters it is working fine.

Post "Diagnostic Info" from Admin > Troubleshooting.
The bottom screenshot says that you have not selected "Field to map to (required)"

@Gaurav Notice the "Filter widget type" is None and there's a note underneath with a link.
Make sure that the Field Type in Admin > Data Model is one of the compatible ones:
