When should date time fields be marked as one of the date/timestamp types vs no special type

I’m not sure if I fully understand when it is a good practice to mark a date time field as one of the date/time stamp types vs just leaving it as no special type. Are there any rules of thumb I can follow?

Always set the Field Type to the closest option, when possible.
It affects formatting and X-rays.
