I just configured SSO using google and now all users within my company can access metabase,
I'm trying to limit access (the hability to log in to metabase) to only a subset of users, is this possible using the open source version?
Yes, you set the rights by user/group.
you should check if Google allows access per application at the workspace configuration. Another way would be to disable users once they authenticate to Metabase, but that's ex-post

I tried setting groups in Google but even so all users had access and found no way in the Metabase interface to specify the group I wanted to allow access to
