I am trying to understand where the timeout is coming from that is causing my dashboards/reports to stop loading at around 2 minutes. Is there a setting in Metabase or is this on the database side?

It's difficult to say without seeing the logs.
Post "Diagnostic Info" from Admin > Troubleshooting.
And check the logs in Admin > Troubleshooting > Logs.
