Is there a way to set a maximum width for the display of fields (or on a per table/field basis)? Often there are database columns that are several hundreds of characters wide and Metabase defaults to growing the field width to accommodate displaying everything.

Currently no, but you can set the column to only display in detail view - Admin > Data Model:
