Operations Guide actually has info on Loglevel tweaking under Configuring Logging Level … It was just missing from the ToC. I have just submitted a PR towards that so should hopefully be updated in next release.
In top of that you of course need to pick a way to do that in a Docker environment e.g. by volume mapping the file…
