I'm looking for an admin tool or report I can run to get a list of what queries are scheduled to run when... is this possible?

It's available in Audit (Pro/Enterprise plans): https://www.metabase.com/docs/latest/usage-and-performance-tools/audit#subscriptions--alerts
Otherwise you would have to look in the application database tables pulse*
