First things first, thank you for all the hard work!
Is there any way to turn off the "Fully-formatted result downloads" feature added on version 0.41?
Some more context: we want to upgrade our metabase version but that feature will break some downstream services that consume exports and are expecting these exports on a certain format.
We would still like to maintain our visualization settings on the questions but have the exports show the raw data as before 0.41.

I don't think I understand what you are referring to. Are you talking about XLSX formatting? If yes, then no, there's no configuration for that and you should use CSV or JSON if you need downstream usage.
From the release announcement, I was under the impression that CSV and JSON exports are also affected, quoting:
"And renamed columns are now honored in CSV and JSON as well."

I ended up testing a simple question and it looks like csvexports are now respecting the column order but the names and formats look like before 0.41, so that shouldn't impact
