Would it be possible to have a fixed address for the latest release rather than one that contains the version number? Would just make it possible to have a batch file or cron job to update the release on a server.

never ever do that, it's a very bad operational practice. Upgrades need to be planned, always
I would say that "it depends" (I'm a sysadmin for a decent part of my time).
Everything is a trade-off, and in this very specific case, with all the other elements I have (including the fact that this installation is not mission-critical), it is the good one for us.
(but thanks for your comment, it can be useful to some, and in general I agree that unattended upgrades can introduce trouble for most).
